After training in France in the ’70s, Jonathan spent time crafting meals at the legendary Chez Panisse under the guidance of the formidable Alice Waters. Through her tutelage he learned the importance of using fresh, locally sourced, organic ingredients and was part of pushing the California cuisine movement forward.
Jonathan was one of the first chefs to bring this idea to New York, and his restaurant Jams elevated his name in the east coast culinary circles.
Recipient of the 2016 James Beard Award for "Best Chef: New York City," we’re honored to have Chef Waxman resurface the "Jams" name and command the food experiences at 1 Central Park. Restaurant to in-room dining, his careful hand has overseen everything that comes out of our kitchen.
